this is my home this is my kitchen thisis my familyTilley Jack Polly Megan and of course mywife Donna[Music]you may think you're the busiest personin the world but over this series I'mgoing to prove it's still possible tocook stunning food at home my rules aresimple home cooking has to be easy canbe fast it's got to be delicious so ifyou think you can't cook amazing food athome think again these are the onlyrecipes you'll ever need breakfast lunchand dinner everything I know aboutcooking I've learned through hard workdrive and passion from the age of 17 aremade food my lifeand it's fair to say there since thenfood has been the making of me but thesort of cooking I made my name with intogood dishes made with world's finestingredients it's a million miles awayfrom the food I grew up on for the firstprogram in the series I'm updating someof the home cooked dishes I absolutelyadored when I was a kid first up forbreakfast a classic from my childhoodstunning baked beans with fluffy potatocakes next a modern taking my favoritechildhood lunch fantastic fish fingersand an irresistible chip butty my mouthwas salivating and I've got competitionin the kitchen as mum helps make dinner[Music]when I was a kid this is my dream dinnersuper comforting shepherd's pie withpeas and carrots followed by a stingdate pudding with butterscotch sauce todie foron the road this is my ultimatechildhood food breakfast lunch anddinner first a breakfast to really setyou up for the day easy homemade spicybaked beans with deliciously lightpotato cakes[Music]the first big thing but I remember as akid was bacon and beans so this is likea literal rendition except we're usingthe most amazing pancetta Ernie come ondisappear don't chase the mice now padon get nice and hot I'm gonna turn thesebeans into glamorous beans pancetta intothe pan lightly seasoned that is curedso it doesn't need that much seasoningthen start firing off that pancetta it'samazing how the individual tastes ofbaked beans they're somewhat bland so Ialways like to make them a little bitmore spicy so a nice finely choppedchili with the seeds chili innow a little bit of garlic crushedphenomenal[Music]get that bacon really nice and crispytry off the chili and the garlic andthen onions my top tip for dicing finelysliced downwards slice across and thencut down to simply dice bacon onionchili garlic but flavor all contained inthat little pan once you sweat the onionoff a little bit of sugar in there thebrown sugar will start to caramelizedarken and enricher as well at the sametime well as beautiful now couple oftablespoons cider vinegar deglaze thepan it's got that really nice powerfulup kick to it now spice that up with oneof my favorite seasonings Worcestersauce bring that to the boil and addyour starter pureed tomatoesturn that down simmer the sauce toreduce then adding the classic bakedbean haricot beans you can buy haricotbeans dried or canned now packed withprotein and have a lovely soft textureturn down the heat and let the beansabsorb all that beautiful spicy tomatosauce and just let that simmer now fiveor six minutes now for my potato cakesthey're a fantastic way to use leftoverball potatoes are so easy to make I'mmaking a simple potato dough by addingflour and butter to the mash that givesit that nice sort of cakey texture andit goes from this leftover ball potatothere's nice light flowery potato heaventake a nice spoon of potato lightlyflour your board we're gonna fry thesecrisp on the outside and just nice andfluffy in the center now do you pan niceand hot we'll start off with olive oilinto the panput the bus around the outside becauseit starts heating up what time it goesinto the center so we're sort of nutground gently love that nice light crisppetal beautiful now take them out potatocake in the middle and a nice beautifulspoon of beesgrowing up with beans on toast as atreat still to this day after all thoseyears has not changed my love cod and haddock but todayI'm using pollock white fish likePollock has a wonderful sweet firm flakyfleshPollock's so versatile bake it batter itcook it up in fish pie or even cut itinto strips for my fish fingers whichI'm cooking for lunch[Music]growing up I ate tons of lamb mince meatis generally from less expensive buttasty cuts like neck and belly you canuse lamb mince in so many ways in MiddleEastern copters or mix with mint for atwist on a traditional burgerbut as a kid I couldn't get enough ofshepherd's pie and I'm making an amazingversion for dinner eight potatoes almostevery day as a kid I loved them butremember it pays to use them properlythey come in three types flowery waxyand all-rounders for mash fried orroasting floury potatoes like KingEdward's are brilliant for boiling orsalads use waxy potatoes like Charlotteif you want the best of both worldsin your kitchen go for an all-rounderlike you Desiree I'm using them to makeincredible oven chips next when I wasgrowing up food in Britain was somewhatdifferent to what it is now no one hadheard of organic you can even buyavocados in the shots where I livedParis kitchens might have been cookingnouvelle cuisine but it certainlyhaven't made any inroads around our waymy ultimate lunch when I was growing upwas very plain pretty trashy but I stilllove it now and again fish fingers witha delicious chip buttythe secret of a good chip butty is inthe potato now these are désiréepotatoes one of my first ever jobs wasworking in a chip shop I used to putsacks and sacks of potatoes into therumbler which will send the potatopeeler all day long today I'm gonna dosomething a bit healthier for my ovenchips with a twist simply peel slice andblanch for three to four minutes drainseason and cover well with paprikaspread evenly over an oiled baking trayand place into a preheated oven for 20minutes simple as thatnext up easy fish fingers this isPollock a really nice firm deliciousfish cut the fish and finger sizepatterns of fish put them onto yourplate and just lightly salt them you cando that literally 20 minutes 30 minutesbefore you start cooking the fish itfirms the fish up beautifully and itallows them to become a little moredurable especially in the pan now forthe coating start by thoroughly coatingthe fish in seasoned flour and then justrolling to get rid of those little sharpcorners because then it stops thosecorners almost burning in the pan inyour egg wash and really coat themwonderfuland then this is dill goes brilliantaway with a fishI'm run the deal through my breadcrumbsthat makes it more aromatic maven on toyour breadcrumbs nothing wrong with thechip butty nothing wrong with fishfingersjust give it a lovely modern twistbeautiful once the fish fingers arethoroughly coated they're ready to panfry and they'll need around 3 minutes oneach side all the fish fingers to benice and crispy get a really nice coloron them first and then we'll flip themover and finish them with butter bringthe heat up into the pan a nice littlenormal butter that work wonders with thebreadcrumbs in the deal nice andcarefully take them out and it'll looksmell incredible so nice and crispy nowto assemble my chip butty starting withbuttered big crusty breadit's nice and Brett mop-up amazingflavor on slicing halfnever slicing an angle my mouth issalivating beautiful on whether shipbutter is one thing missing and itsignifies that I've never forgotten thejoy I've come for food but my god thatmakes me feel like a nine-year-oldexcuse me for a moment we want to stuffmy
