(light guitar music)- Hi friends, welcome to my channel.If you're new here, my name is Alyssa.Today we are making breakfast,and we are makingholiday-inspired breakfast.So I don't know aboutyou but I love havinglike a special breakfaston Christmas morning,and these are three different thingsthat I would definitely make.Now I know not everybodycelebrates Christmas,but for those of you whodo, these down below.Otherwise, let's go aheadand dive into our recipes.So the first recipewe're gonna start makingis my almond flour waffles.We're gonna start with somealmond flour, of course,then some quinoa flour, aswell as some flaxseed meal,baking powder, and spiceswe're using cinnamon,a little bit of vanilla powder,you could also use vanilla extract,and sea salt.Whisk that together andyou can set this asideand we'll move on to our wet ingredients.So for waffles, thetrick to making them niceand fluffy is to separate your eggs.So we're gonna separate three eggs here,adding the whites into a bowland adding the yolks into a separate bowl.So once you have your whites all together,we are going to just beat themtogether to form stiff peaks.I like to use an electric mixer here,you could also use a whiskbut I think that wouldbe really challenging,or you could also use a stand mixerbut an electric beateris the best thing to use.So just beat them all togetheruntil they form stiff peaksand then you can set that asideand move on to the restof the wet ingredients.So we're gonna add somealmond milk into a jar,to that, just add your three egg yolks,and then we'll also addin some maple syrup.And if you're using vanilla extract,you'll also add the vanillaextract in here as well.So then whisk that togetherand you're ready to assemble everything.Start by pouring the yolk mixtureinto the dry ingredients first,and then you'll stir that togetheruntil it's mostly combined.And then the trick with egg whitesis to transfer them into the bowland then use your spatula or spoonto gently just fold them into the mixture.You're not beating them in at all,but what you're doingis gently folding theminto the batter here sothat you don't deflate them.And that's the trick formaking waffles nice and fluffy.Once you have your batter all together,you can just cook themon your waffle iron.I like to do gluten free wafflesa little bit on the hot side,so I have it on like a fourout of five, heat wise.I like to spray itfirst and then I just doabout a third of a cup of the batterdirectly onto the waffle iron.And I just cook it until thewaffle iron says it's done.And once it's done, you canjust serve them right away.Of course these wafflesare like pretty basicin terms of flavor soany toppings are fine.I'm keeping it really simplewith just fresh raspberriesand maple syrup but it's alsogreat with coconut yogurt,it's great with banana, it'sgreat with peanut butter,it's great with almond butter,it's great with blueberries,it's great with pretty much everything.So I hope you guys try thesebecause these are definitelymy favorite gluten free waffles.(light guitar music)The second recipe we're gonnamake is my gingerbread cake.So we are gonna start by addingtwo eggs into a mixing bowl.From there we will addin some non-dairy milk,as well as some pumpkinpuree and our molasses.You will stir this togetheruntil it is smooth-ish.And then you will add our coconut sugar.And then beat that togetherit's all nice and combined.(light guitar music)From there, we will addin our dry ingredients.So our dry ingredients, weare using some quinoa flouras well as some brownrice flour, almond flour,arrowroot starch, littlebit of coconut flour,some cinnamon, ginger, nutmeg,and you can also do a pinch of saltor vanilla if you want it.And, just like many of my other recipes,this is a one bowl recipe,so you can just stir alltogether directly in this bowl.Just stir it with your spoon,you could also beat it togetherwith an electric beater if you wanted.And like I said in thebeginning of the video,but I do just want tomention it one more time,you can get all of these flours,which are usually pretty priceyat places like Whole Foods,you can get them allfor an amazing discounton Thrive Market.So once we have ourgingerbread cake batterall nice and smooth, we are just going totransfer this into aparchment lined baking pan.I like to use a square pan here,I think you could alsomake this into a loaf,I haven't tested itbut the baking times wouldbe just slightly different.You could actually probablyalso make this into muffins,but we're gonna do a cake here.So we're gonna just smooth it overwith the back of our wooden spoon.Make sure it gets into the corners,and then we're just gonnabake it up in the ovenuntil it is baked through the center.Full instructions are on the blog.And this is what it looks likewhen it comes out of the oven.You're gonna wanna let it coolin the pan for a good 10 to 15 minutes.And then you can justtransfer it onto a wire rackor a cooling rack, or whatever,and let it cool completelybefore you cut into it.So once you are ready to cut into it,you will see it has such a soft texture,like the texture of cake.It's so awesome.And I wanna show you the insideonce we're actually done cutting itbecause it is full of airbubbles, it's spongey, it's cakey,it's not too sweet, it'sgot full gingerbread flavor,and it is absolutely delicious.So from here, you could do a traditionallike buttercream frosting.You could also get the SimpleMills frosting on Thrive,which is vegan,or if you don't feel like doing frosting,you can do what I did and justdo a dollop of coconut yogurtand a drizzle of molasses.It kind of gives you thesame illusion of icing,a little less sweet, a littlemore breakfast friendly,but still totally delicious.(light guitar music)All right, and our final recipe todayis cinnamon roll pancakes.We are gonna start with quinoa flour.We're also gonna add in some almond flour.We're also gonna use some baking powder,as well as a little bitof cinnamon for flavor,and some sea salt.And you can whisk thistogether until it is combined.And you'll notice that alot of the recipes hereare using the same flour combinations.I do that so that you canjust purchase the flours once,go to Thrive, buy the bag of almond flour,buy the bag of quinoa flour,and then you can make a ton of my recipes.So once we have the dryingredients mixed together,we're gonna add in two flax eggs,as well as some coconut yogurt,this gives it a reallynice texture and flavor,some maple syrup, a little bit of oil,and some non-dairy milk.And you can just stir this all togetheruntil it forms a beautiful,smooth, pancake batter.From here, we are going to set that asideand we'll make our cinnamon swirl filling.So cinnamon swirl filling,you can either usemelted coconut oil or melted vegan butter.You'll see here that itdoesn't spread as well with oilso I definitely do recommendusing melted vegan butterif possible.You'll also add in some coconut sugaras well as some cinnamon,and you'll just stir thatall together until it is,like, stir-able I guess.From there, we will transferthis into a squeeze bottle.The only thing that I hadwas an old honey bottle,I would not recommend using this.I will link the onethat I like down below.And you'll set that aside.So once we are ready to cook our pancakes,we are going to heat up our skillet,and you'll just addabout a third of a cup,between a quarter and a third of a cup,of the batter onto your pan.And then use your squeeze bottle,and you'll see why this one isn't good,to form the swirl in thecenter of the pancake.So this one doesn't havea very good squeeze thingso it didn't come out all that wellso I had to use my hand tokind of like create the swirl.But if you use the bottlethat I linked down below,you will be able to geta better swirl than this.And then, basically,we're just gonna cook itlike you would regular pancakes,until the bubbles start to form.And then we can just flip it overand cook it for another few minutes.And that's pretty much it,just repeat until you'vecooked all of your pancakes.And then for serving, I loveto do a pat of vegan butterand then I do a drizzleof melted coconut butter.It reminds me of icing, it'sextra, obviously, healthy fats,but it doesn't have like a ton of sugar,and it kind of just remindsyou of a cinnamon roll.And then if I'm feelinga little extra extra,I'll do a sprinkle of cinnamonand a drizzle of maplesyrup to finish it off.But these are such a cozy breakfast.They're so fun, definitely kidfriendly, and super deliciousso I know you guys
